Spinach and Cheese Pancakes

Ingredients
2/3 cup (160 ml) cooked spinach, drained, chopped

3 large eggs

1 cup (250 ml) milk

1/2 cup (125 ml) flour

1/3 cup (80 ml) green onions, chopped (optional)

8 oz (225 g) Canadian Swiss-style cheese, grated

Dab of butter for frying

Preparation

Quick and easy to make, these pancakes are scrumptious as a main course, side dish or brunch dish.

Loosely beat eggs and milk. Add to flour. Mix lightly. Stir in spinach, onion, and season to taste. Over medium heat, melt butter in large preheated, non-stick frying pan. Using 1/4 cup measuring cup, scoop mixture into pan. Fry over medium heat, pushing batter towards center if it spreads. Sprinkle 2 heaping tablespoonfuls of cheese over each pancake. When pancake's bottom is golden, turn and fry other side — about a minute.
